Parsnips are a winter vegetable that stores well. The root vegetable is white, yellowish and tastes sweetly aromatic. Parsnips have a similar flavour to celeriac and parsley root.

Parsnips need a sunny to semi-shady location and a nutrient-rich and moist soil. Waterlogging should be avoided
Parsnips can be used in soups, purées and for various mixed vegetable dishes. The vegetable can even be eaten raw, grated into salads and fried like crisps.
Parsnips should be stored in a cool, dry and dark atmosphere. They can become bitter if stored for too long.
