Aubergines

The fruit vegetable is a classic ingredient in Mediterranean cuisine. The aubergine is pear-shaped with a smooth, shiny, firm skin that ranges from white to purple-black. Its flesh is white and neutral in taste, sometimes with a hint of bitterness.

Cultivation & harvest

Aubergines are grown in a loose soil rich in humus. The wine-growing climate in the Palatinate is ideal for this heat-loving vegetable. A wind-protected, warm location and the appropriate soil conditions thus ensure a successful harvest of eggplants between June and November.

Use

Aubergines can be prepared in many different ways in hot dishes, as a grilled vegetable or as a side dish. You should note that the aubergine needs a lot of spice to allow its delicate aroma to unfold.

Storage

Aubergines are ideally stored in a cool cellar and should be used as quickly as possible.
