Green-purple asparagus is a type of asparagus that is grown like green asparagus, but unlike green asparagus, it has a purple color caused by the plant pigment anthocyanin. It is grown above ground and retains its color when cooked, but may turn dark green during cooking.
Use
Green-purple asparagus is considered a delicacy and can be boiled, fried or grilled.
Storage
Green-purple asparagus can be stored wrapped in a damp cloth in the vegetable compartment of the refrigerator for a few days. However, it tastes best when fresh.
