The basis is constant communication with our producers, which we complement with harvest forecasts and computerised calculations concerning the time of harvest. Once it’s clear how much fruit and vegetables we can offer, we begin selling. Only once the sale is complete do we inform the growers of which quantities need to be harvested at which time. So we only harvest what’s already been bought. That way, the grower is not stuck with leftover harvested produce and we can guarantee buyers the best possible freshness.
